
The temperatures are beginning to drop, and you can start to see your breath the moment you walk outside.Winter is coming fast and what better way to enjoy it then with a soup. This is a creamy winter soup that isn’t too heavy. It is great to eat on cold winter days, while sitting curled up in a blanket by a warm inviting fire. I have tried other Kale and Kielbasa soups but they were not cream based, I think that added element gives a rich flavor. The addition of potatoes also makes this a bit heartier.
Serves: 6
You will need:
- 1 tablespoon of olive oil
- 1/2 medium sized onion, diced
- 1 clove garlic, minced
- 1 14oz Kielbasa or Turkey Kielbasa
- 3 Yukon gold potatoes, scrubbed and diced small
- 3 cups of chicken broth
- 1/4 cup dry wine such as Pinot Grigio
- 4 cups of kale, rinsed, trimmed and torn or cut into pieces (think salad size pieces)
- 1 cup half and half
- Freshly ground pepper
- In a soup pot over medium heat heat olive oil. Once olive oil is heated add onions and garlic and saute for 1-2 minutes.
- Next add the kielbasa and saute for 2 minutes and then add potatoes. Cook for 5 minutes
- Next add the dry white wine, chicken broth and the kale. Cook for 20-25 minutes or until the potatoes are soft with punctured with a fork.
- Reduce the heat and add the half and half. Simmer for 10 more minutes but do not bring to boil.
- Ladle soup into bowls and top generously with freshly ground pepper.
Now grab your blanket, stoke the fire and enjoy!
