Recipe for Pizza Bites at Life's Ambrosia

On day two of Super Bowl snack week, I thought I would share this recipe for pizza bites. I think the trick with these is to toast the bread first, then rub it with a little garlic before you add the toppings. It adds a garlicky crunchiness to the bite. Best of all you can top these with any of your favorite toppings.

Pizza Bites Recipe

Makes 15 bites

Ingredients:

1 (8 ounce) can of tomato sauce
1/4 teaspoon granulated garlic
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
kosher salt and pepper to taste
1/2 baguette, sliced into 15 slices, about 1 inch thick
1 clove garlic, peeled
2/3 cup to 1 cup shredded mozzarella
About 10 slices of pepperoni, diced

Instructions:

Turn your oven to the broil setting.
In a sauce pan add tomato sauce, granulated garlic, dried basil, dried oregano and salt and pepper. Heat over medium heat until warmed, but not boiling.
Line a cookie sheet with aluminum foil (it makes for easy clean up). Lay the baguette slices in a single layer on the cookie sheet. Cook under the broiler for about 1 minute. Just until they are slightly toasted. Once they are toasted, rub each slice with the clove of garlic. Return to the oven and broil for 1-2 more minutes or until they turn slightly brown.
Using about a teaspoon of sauce, spread sauce over the toast. Layer with cheese and then pepperoni. Repeat until all baguette slices are complete. Put under the broiler until cheese melts.

The best thing about these is that the possibilities are endless. Another variation would be your favorite BBQ sauce with some left over shredded chicken and some pepper jack cheese. Or go traditional Italian and use the same tomato sauce, some fresh mozzarella and fresh basil.

I use canned chopped tomatoes, your recipe says canned tomato sauce, do you mean the juice from tin tomatoes or another kind of sauce. Sorry, I am in the UK so we just might be talking about the same thing, I’m not sure!
Delicous recipe anyway. (I rub a garlic clove onto my bread before adding the sauce and cheese).

You’re welcome Moniqueues! In the US we have canned tomato sauce which is a puree of tomatoes so its a little different than juice from the tin. I would think that it would yield a little bit thicker sauce than chopped tomatoes, but I think the chopped tomatoes would add a nice texture. I’ll have to try that next time.
