Chocolate Butterscotch Cookies

These just might be my favorite cookies ever!  Super moist cake mix helps make these cookies irresistible. They are soft and chewy and full of butterscotch chips. Serve them with a cold glass of milk and you have the perfect afternoon or late night snack.

Makes: About 3 dozen

You will need:

  • 1/4 cup butter, softened
  • 2 eggs
  • 1 package Betty Crocker Super Moist Devils Food Cake mix
  • 1/4 cup water
  • 1 cup butterscotch chips
  1. Preheat oven to 350 degrees.
  2. Mix softened butter, eggs, cake mix and water in a bowl. (Note: This batter will be really thick so it may be a little hard to stir)
  3. Once everything is mixed add the butterscotch chips. Stir to combine.
  4. Drop teaspoonfuls of batter about 3 inches apart on greased cookie sheet. Bake 10 minutes. Place on cooling rack. Repeat until all batter is cooked.

I love your blog! You take great photos and these cookies look fantastic. I’ve had a cold for the past few days and have no sense of taste but I’ve been seriously craving cookies! I don’t want to eat any though until I can actually enjoy them :)
