Kielbasa and Cabbage

I know, I know, cabbage is not everyone’s favorite and as I kid I used to turn up my nose at it but as I have grown older I have actually become quite fond of this yummy veggie. I am also a huge fan of kielbasa and have found that it is a perfect partner for some cabbage. In this recipe for kielbasa and cabbage I saute cabbage with garlic, cider vinegar, crushed red pepper and caraway seeds. Sounds yummy all by itself right? Well, I took it one step further and added in some scrumptious polish sausage.

Serves 4

You will need:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 4 cups roughly chopped cabbage, rinsed
  • 1/2 teaspoon caraway seeds
  • 1/4 teaspoon crushed red pepper
  • 2 tablespoons apple cider vinegar
  • salt and pepper
  • 1 package beef or turkey kielbasa, halved lengthwise and then sliced into bite size pieces
  1. In a skillet large enough to accommodate the cabbage, start by heating olive oil over medium heat. Add garlic and cook for about 1 minute. Add remaining ingredients except kielbasa. Cover and cook 15 minutes.
  2. Add the kielbasa and cook another 10 minutes or until the sausage is warmed through.

Serve this over creamy mashed potatoes orĀ  roasted garlic mashed red potatoes and you have a very comforting meal. Just keep your pillow handy, you’ll probably want a nap afterwards. Enjoy! :)

oh, that so totally screams comfort! Anything with mashed potatoes is great ;)

I boil it up all in one pot: potatoes first, then cabbage, add kielbasa last. Serve in big bowls so to mash up & butter taters, drown cabbage in vinegar. Lots of fresh ground pepper. Husband thinks ‘I cooked!’
