Cajun Prawn Fettuccine

Recently I was craving something creamy with just a little kick to it and I always have some pasta in the pantry, so I thought I would indulge myself . The result of my indulgence you ask? This recipe for Cajun Prawn Fettuccine. I must say, it really hit the spot!  I simmered succulent prawns in a creamy Cajun sauce with shallots and bell peppers before tossing the mixture with fettuccine. Rich and Creamy, Cajun-y goodness! Who could resist?

Serves: 6

You will need:

  • 1 pound dried fettuccine
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1 green bell pepper, chopped small
  • 1 cup half and half
  • 1/2 cup light sour cream
  • 1 tablespoon Cajun seasoning
  • 1 pound (51-60) count prawns
  • kosher salt and pepper to taste
  1. Start the water for your pasta and cook according to package directions.
  2. Meanwhile, heat olive oil and butter in a large pan over medium heat. Once butter has melted add garlic, shallots and bell pepper. Cook until slightly softened, the bell peppers will still be a bit crunchy, about 3 minutes.
  3. Reduce heat to medium-low. Add half and half, sour cream and Cajun seasoning to pan. Stir to combine and cook until warmed through about 3 minutes. Add prawns and cook for 5-6 minutes or until the prawns are pink.
  4. Once your pasta is finished cooking, strain and add fettuccine, toss to combine. Let stand 5 minutes, toss once more. Serve.

So yes, this may be a bit rich, but go ahead, indulge yourself. I find its fun to do that sometimes :) Enjoy!
