Grilled Cheese and Tomato Sandwich

Grilled Cheese and Tomato Sandwich

Have you ever read about some kind of food and immediately pictured yourself savoring every last bite of it? This happens to me from time to time. This sandwich is a perfect example. I’m currently reading a book where the main character is constantly eating a sandwich with ooey-gooey melted colby and cheddar cheese with sweet tomatoes sandwiched in between. After the 4th mention of it in the book, I had no choice but to make it on my own. Can you blame me?

In the book, the grilled cheese sandwich acts as a form of comfort for the main character. This is something that I can totally relate to. Even though it is often viewed as a kid food, I have always found a perfectly grilled grilled cheese sandwich one of those meals that always satisfies. I’m not sure if its the buttery bread or the melted cheese, but whatever it is after I’ve finished it I’ve always got a smile on my face.

The Recipe

  • Serves 2
  • Prep time:
  • Cook time:

Ingredients:

  • 4 slices sour dough bread
  • 2 tablespoons butter, divided
  • 4 slices cheddar cheese
  • 1 tomato sliced into 4 slices
  • 4 slices colby cheese

Instructions:

  1. Use 1 tablespoon of butter to butter each slice of bread.
  2. Layer 2 slices of cheddar cheese, 2 tomato slices and two slices of colby cheese between 2 slices of sour dough bread.
  3. Melt remaining tablespoon of butter in a large skillet over medium heat. Place sandwich in pan and cook 3 - 4 minutes per side or until the cheese is melted and the bread is golden brown.
  4. Serve.

And of course no grilled cheese sandwich would be complete without tomato soup so why not try serving it with this Fire Roasted Tomato Soup? Enjoy!

I love grilled cheese! This recipe looks delish – but I’m going to have to choose another bread other than sour dough. I hope it won’t hinder the awesomeness. :P

This is one of my favorite sandwiches. I like to add sauteed onions too, just to spice things up a bit. :)

The book wouldn’t happen to be the Sugar Queen by Sarah Addison Allen, would it? If so I completely know what you’re talking about!

  • Amanda

Yum! Have you submitted this to the Grilled Cheese Academy yet? http://www.grilledcheeseacademy.com/submitrecipe

It has to be Sugar Queen by Sarah Addison Allen. How funny. I just read that book a few months ago. This is true and simple comfort food. Yum!
