Pulled Pork Grilled Cheese

That’s right. Pulled. Pork. Grilled Cheese. It’s cheesy. It’s porky. It’s buttery. It’s melt in your mouth cheesy pulled pork goodness. I don’t really think that there is any way it could get any better than that. Oh, except for the fact that I add caramelized onions too. All of these things together makes this one of the best grilled cheese sandwiches I’ve ever had.

That is a pretty bold statement. But there is just something about this sandwich. The way that the pulled pork and sweet caramelized onions blend so perfectly between two layers of pepper jack cheese and buttery sour dough bread.

I don’t know why I have never thought to make a pulled pork grilled cheese before. I’ve made pulled pork sandwiches and quesadillas but never thought to put cheese on a pulled pork sandwich. Now that I have, I know that every time I make pulled pork in the future I am going to ensure that there is enough left over to make these sandwiches.

Heck, I might even make pulled pork just so I can make these sandwiches every day of the week.

The Recipe

  • Serves 4

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium yellow onion, sliced
  • 3 tablespoons butter, softened
  • 8 slices sour dough bread
  • 12 slices pepper jack cheese

Instructions:

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot cook onion over medium-low heat until brown and caramelized. About 15 minutes.
  2. Remove onions. Add pulled pork and remaining olive oil to the pan and cook until warmed through.
  3. To assemble the sandwiches. Butter one side of each slice of bread. On the side that is not buttered place two slices of pepper jack cheese. Top with pulled pork and caramelized onions and one more slice of cheese. Top with another slice of bread, butter side out.
  4. In the same skillet you cooked the onions in, cook the sandwiches over medium heat until the cheese has melted and bread is browned. Serve.

    Hello Des…

    I have been a fan of your for some time, and make your dishes quite often. Always good, and always good for the soul.

    I don’t comment on blogs, but had to on this one…! I have been a fan of grilled cheese sandwiches ever since I had my first one in college, at U of I Chicago Circle. My then sweetheart and I used to go to the cafeteria for a grilled cheese 3 times a week.

    We were 19 and 20, and a big black woman who got to know us as regulars made them for us all the time — we requested extra cheese and extra butter and she gave us a big smile and then the sandwiches…Those were the times…!

    I’ve been making them after her style ever since — yes, still today, often at mid-nite, and I’m 64.

    But now you come along and offer the idea of pulled-pork…Brilliant…Why did I never think of that…Geez…! I can never get enough of pulled-pork and never get enough of grilled cheese.

    Now I have both…! Great recipe and a Bib is in order.
    I’ve been a professional photographer all my life. Please tell your husband to keep the images rolling…They always make me hungry and give me an excuse to make one of your dishes…LOL.
