Chicken Tortellini Soup

Chicken Tortellini Soup is a filling soup with shredded chicken, rosemary and cheesy tortellini. This hearty chicken soup is ready in 30 min!

Some of my favorite soups are the kind of soups that take some time to prepare like Split Pea with Ham , Chili or Beef Barley Soup  The soups that require you to start the broth early in the morning and let it simmer all day. This soup however, is not one of those soups. It just tastes like one.

With a little help from a store bought rotisserie chicken (or any leftover chicken you might have on hand) and some store bought tortellini, Chicken Tortellini Soup comes together in under 30 minutes. Making it the perfect soup to make on a cool weeknight evening.

Let’s talk about all the ingredients you’ll need to make it: 

Chicken Tortellini Soup:

  • CHEESE TORTELLINI: You can use fresh or frozen tortellini for this recipe, fresh will cook a little bit faster than frozen. 
  • CHICKEN: Cooked shredded chicken whether store-bought or leftover cooked chicken. 
  • ROSEMARY: Fresh rosemary will add an earthy, herb taste to the soup. Don’t use dried for this recipe, fresh will give you the best flavor and texture.
  • GARLIC: I like my soups to be pretty garlicky so I add 10 cloves here but you can use a little less if you prefer. 
  • CHICKEN BROTH/STOCK: You can make your own chicken stock or use low-sodium store-bought chicken broth. Try making Instant Pot Chicken Stock
  • SALT AND PEPPER

You guys, this soup is SO easy to make. Simply simmer the chicken, rosemary and about 10 cloves of garlic together for 20 or so minutes. Then add in the tortellini and cook just until the tortellini is cooked through. That’s it.

Storage and Leftovers: 

Chicken Tortellini Soup is best eaten the day that it is made because when storing the tortellini with the broth, the tortellini will absorb the broth. This will make the tortellini mushy and won’t leave you with much broth. 

My whole family loved this Chicken Tortellini Soup! It’s quick and simple. It’s satisfying and is the perfect soup for any cool fall day.

  • Place chicken broth in a large pot over medium heat. Add in chopped garlic, fresh rosemary and chicken. Simmer until the broth is warmed through and the garlic is soft, about 20 minutes.
  • Stir in the tortellini and cook for five minutes or until the tortellini is soft and warmed through. Season to taste with salt and pepper. Ladle into soup bowls and serve.

    Soups that taste like lots of time on the stove but come together quickly are the best kind. Our Indian summer in California is also seemingly coming to an end too – time to pull out the Le Creuset! This soup looks delish!
