Skirt Steak Fajitas

If you are looking for something to get the food lover in your life then the new cookbook by Laurie McNamara is just what you’re looking for. Her new book Simply Scratch: 120 Wholesome Homemade Recipes Made Easy would make an excellent gift this holiday season. There are so many delicious recipes and today I’m sharing one of my favorites: Skirt Steak Fajitas.

I first met Laurie a few years back when I attended the BlogHer Food conference in Austin. She was such a sweetheart and after checking out her blog, Simply Scratch, it instantly became one of my favorites. Laurie cooks a lot like I do. Her recipes are down to earth, easy to follow and perfect for families.

When I first got my hands on this gorgeous cookbook and began thumbing through the pages, I found so many recipes that I just knew my family would love. The book starts with the Kitchen Basics chapter that includes tips for how to stock your pantry, tips on using different fats and oils and so many more useful kitchen tips. And that’s just chapter one! There are also chapters on breakfast,  soups and salads, sides, mains, dessert and my favorite chapter: Chapter 2: The Basics from Scratch where Laurie shares her recipes for condensed soups, seasoning mixes, condiments and dressings so you don’t need to buy them from the store. I have always been a huge fan of making my own seasonings but had never thought to make my own condensed soups before, such a cool recipe to have in your arsenal!

I’m telling you, friends, this is a great book.

Today I am sharing Laurie’s recipe for Skirt Steak Fajita’s just to give you an idea of all of the yumminess that you can find in this book.

Skirt Steak Fajitas

These Skirt Steak Fajitas are all kinds of delicious. They start off with a simple marinade using Laurie’s Homemade Fajita Seasoning, then a quick cook with onions and bell peppers and you’re off to one of the most flavorful plate of skirt steak fajitas I’ve had in a long time.

Skirt Steak Fajitas

Ingredients
  

Ingredients:

  • 1 clove garlic minced
  • 3 tablespoons fatija seasoning
  • 1/4 cup grape-seed or olive oil
  • 1/4 cup fresh cilantro leaves chopped plus more for serving
  • 1 1/2 pounds skirt steak halved crosswise
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 sweet onion halved and sliced vertically
  • 1/2 teaspoon kosher salt
  • 1/2 red bell pepper sliced into strips
  • 2 wedges of lime

Instructions
 

  • In a shallow bowl, combine the garlic, fajita seasoning, grape-seed oil and cilantro. Toss the steak to coat in the marinade. Cover and marinate for 30 minutes.
  • Meanwhile, heat a 12-inch cast-iron skillet over medium-high heat. Place the butter, olive oil, and onion in the skillet. Season with salt, stir and cook until the edges of the onion are deeply golden yet still a bit firm, about 10 minutes. Add the peppers and cook for 5 - 6 minutes more, depending on how you want them. Transfer the onion and peppers to a small dish.
  • Working in two batches, sear the steak on both sides for 3- 4 minutes on each side. Transfer to a cutting board and let rest for 5 to 8 minutes before slicing into thin strips. Return the strips and any juices from the cutting board to the skillet, squeeze in the juice from the lime wedges and cook for 3 to 4 minutes more. Remove from the heat and tent with aluminum foil to keep warm. Serve with warm tortillas, guacamole, cotija cheese and pico de gallo.

    These look incredible. We have a Mexican night just about once every week and these would be a delicious change up from our usual tacos and burritos.

    Right now… With it being winter, I love anything warm and comforting… All’s kinds of yummy soups and stews is what I’m cooking up these days… I’ll now be adding fajitas to that list.

    Yummm!! I want these asap! Currently fasting for blood work and these would be heaven right. now. My favorite weeknight meal is spaghetti and meatballs, but I love a a good taco night too!
