Sriracha Egg Salad Sandwich

I have always been a bit of an Egg Salad sandwich purist, that is until I started exploring different ways to make deviled eggs. Now I am beginning to think that there is a whole wide world out there of  egg salad combinations that I need to sample. I decided to start my exploration by making this spicy sriracha egg salad.

I love sriracha. I cook with it. I dip french fries in it. I squirt it on pizza. I stir it into pho. Add it to stir fry. Heck I even marinate chicken in it. It really is my favorite condiment. And if you got the chance to look in my fridge to see the amount of condiments I have, you would know that that is kind of a bold statement. It just goes so well with pretty much everything and this egg salad is no exception. It’s a little bit spicier than your traditional egg salad so if you’re unsure about the amount of spice that you like why not start by adding a couple of teaspoons first then add more if you like.

Sriracha Egg Salad Sandwich

Traditional Egg Salad gets a spicy kick from some spicy sriracha.

Ingredients
  

Ingredients:

  • 6 hard boiled eggs
  • 1/4 cup minced onion
  • 1/4 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon plus 1 teaspoon sriracha
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon kosher salt
  • 4 slices bread

Instructions
 

  • Chop egg whites and yolks together and place in a bowl with remaining ingredients. Mix well. Cover and refrigerate for 30 minutes.
  • Spoon onto bread to make sandwiches and serve.

    Just made this – quick to prepare and very good! I used a little over 2 tbsp of sriracha (it’s got a kick) and green onions. Will make again. Thanks!

    This is a good recipe, but it had a lot less Sriracha kick than I was hoping for. Next time I’ll up it to 2 tbsp or maybe throw in some cayanne pepper.

    My son’s favorite FOOD — eggs and Sriracha. I was mindless shopping in Sonoma, CA last summer and found a SRIRACHA cookbook! My son was so impressed. Have to try this egg salad this weekend!

    Dr. Oz mentioned Sriracha on his show today, one of three food items that are great in helping prevent heart disease. The other two were sweet potatoes and Kidney beans. Going to have to get some Sriacha.

    My husband is crazy about Sriracha! It’s one of the items that gets smuggled into Dubai any time someone visits us. Last week, we were down to what we thought was our last bottle, and he put a little water in the bottle and treated it, in his words, “like crack.” Thanks for sharing this recipe, I’ll definitely also be trying the sriracha chicken nuggets.

    I love the addition of sriracha in chopped egg. I bet this would go great with my secret chopped egg ingredient, wasabi mayonnaise.

    I am absolutely crazy about Sriracha I also put it on everything and marinate everything in it, it is delicious!!!!!!!!! This recipe sounds awesome I am definitely having this for lunch since I already have all the ingredients in my kitchen :)

    Sriracha is my favorite condiment too! Like you, I use it in just about everything! And I LOVE using it on my eggs…it was the first thing I ever used it on outside of and Asian cuisine! I love mixing it with a little ranch too!! YUM!
    Oh…yes, and the sandwich looks fantastic!!
