Watermelon Feta Salad

Watermelon Feta Salad is a cool refreshing summer salad. Sweet watermelon, tangy feta and fresh mint make this salad a perfect addition to any backyard BBQ. 

If you’re thinking “watermelon and feta?!” you’re not alone. I too thought the idea of watermelon, cheese and onions was a crazy combination but when I looked in my copy of The Flavor Bible and noticed that it said feta was a great combination with watermelon I was intrigued.

And alas, the book did not let me down. This salad is cool and flavorful. The watermelon sweet, the cheese creamy and the mint is fresh. There is no other word for it, this Watermelon Feta Salad is simply divine.

What ingredients you need for Watermelon Feta Salad:

WATERMELON: Use seedless watermelon to make things easier. No need to pick out the seeds! You’re going to want to make sure you have a sweet, flavorful watermelon for this recipe. I’ve made it with one that wasn’t ripe enough and it was kind of bland. 

FETA CHEESE: Crumbled feta works best.

MINT: You’ll want to use fresh mint for this recipe. Dried mint won’t work. 

SHALLOT:  Thinly minced so that you don’t get big bites of onion but rather a subtle onion flavor. 

LEMON: To add a little acidity. 

How to make Watermelon Feta Salad: 

Guys. It does not get any easier than this salad. All you do is place all the ingredients together in a bowl and mix it well. The hardest part is letting it refrigerate for 30 minutes to give the flavors a chance to meld It’s an important step though. It is where the salad gets all of it’s flavor. 

Storage and Leftovers: 

This salad will keep in the refrigerator for a couple days. If you keep it too much longer than that I find that the shallots start to take over the flavor a bit.

Watermelon Salad

Who would've thought that watermelon could get any better? But with feta, shallots and mint its simply divine.

Ingredients
  

Ingredients:

  • 4 cups watermelon diced
  • 2 tablespoons shallots minced
  • 2 tablespoons lemon juice
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon chopped fresh mint

Instructions
 

  • Combine all ingredients together in a bowl. Cover and refrigerate for 30 minutes. Serve.

Notes

Don't skip the chilling part. It really helps bring the flavors out in the salad.

    Over here it’s the same story, if I mention wha’s on the menu, it’s likely I’d get a grumpy face, but once it’s on the table and it tastes good….it’s a different story:) I think it’s a guy thing. Anyway, I am just about to make a super similar salad for a BBQ, but I don’t put onions on mine.

    That looks great! I made watermelon bites topped with feta, mint and drizzled with balsamic vinegar. So good!
