This time of year has always been super busy for me but add two little ones to the mix and now I can barely remember to brush my hair in the morning. And with Christmas about a month away now, it’s only going to get busier around here. That is why when the nice people at Alexia Foods contacted me about creating some snacks and 30-minute balanced meals using their products, I was more than happy to.
Keeping each and every meal balanced is a tough job, especially with a toddler in the house. That said, every night there is always a protein, starch and vegetable on the table. And Kellan has to try each and every one before he can leave the table. He doesn’t have to eat it all, but at least try every thing on his plate. The four meal ideas I share here all went over really well. I didn’t have him try the Chipotle Ketchup because it’s a little on the spicy side. But me? Well I may or may not have been licking the bowl.
First up, one of our favorite busy night meals is a grilled cheese. We like them with just plain cheddar but sometimes we also like to shake things up a bit by making a Rotisserie Chicken and Pepperjack Grilled Cheese. Simply shred some chicken, top it with pepper jack cheese, sandwich it between two pieces of crusty buttered bread, grill and voila. A scrumptious dinner that is quick, filling and toddler pleasing. Especially when served with a side of Alexia Straight Cut Fries with Sea Salt, because really, what’s a grilled cheese without a side of fries?
Next up, is the classic French meal Steak Frites, which I also like to serve with salad. It’s so simple and quick. Simply pan sear a steak, serve with a side of salad and fries. I know, it’s usually served with russet potato fries but I decided to switch things up a bit and use some Aleixa Sweet Potato Fries with Sea Salt The sweetness of the fries balances out the meaty steak nicely.
We do always enjoy a perfectly cooked steak in our home so another quick and easy meal is a simple seared steak but this time I served it with baked potatoes, caesar salad and Alexia Onion Rings with Panko Breading and Sea Salt on top, just like my favorite steak house does. Onion rings and steak just go together if you ask me.
With a toddler in the house, burgers are also always on the menu. For this meal idea, I served corn, a side of Alexia Seasoned Waffle Cut Fries and a BBQ Cheeseburger topped with the same Panko Breaded Onion Rings. It went over like gang busters. The BBQ sauce is sweet and the onion rings add just the perfect crunch to the burger.
Finally, with all of the game day snacks that are consumed this time of year, I thought that it would be perfect to create a dip to go with them. Meet this smoky Chipotle Garlic Ketchup. it is beyond easy to make. All you need to do is mix 1/2 cup of ketchup with 2 – 3 chipotle peppers and a 1/2 teaspoon granulated garlic. It is the perfect smoky, sweet sauce to go with fries, onion rings or whatever your heart fancies.
So there you have it 5, super easy and quick weeknight meals and snacks.
