Cheesy Air Fryer Potatoes
Air Fryer Potatoes are tossed in ranch seasoning and air fried to perfection. Topped with mozzarella cheese and broiled for a cheesy twist!
- 1 pound baby Yukon gold potatoes
- 2 tablespoons extra virgin olive oil
- 2 teaspoons ranch seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/2 teaspoon kosher salt
- 1 1/2 cup shredded mozzarella cheese
- 1 tablespoon grated parmesan
- 1 tablespoon chopped fresh parsley
Halve potatoes and toss with extra virgin olive oil, ranch seasoning, garlic powder, pepper and salt.
Place seasoned potatoes in the air fryer basket. Air fry at 390 degrees for 15 minutes, shake every 5 minutes.
Spread potatoes in a single layer on baking sheet. Sprinkle with mozzarella cheese. Broil for 2 minutes or until cheese is melted.
Remove from oven and sprinkle with parmesan and parsley. Serve immediately.
You can use red potatoes or even a blend of tri-colored baby potatoes for this recipe. Russet potatoes would also work but make sure they are cut into bite sized pieces.
