Ingredients

Ingredients:

  • 8 ounces elbow macaroni
  • 1 pound ground chorizo
  • 3/4 cup medium salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Oaxaca or Jack or Mozzarella Cheese
  • Toppings of choice

Instructions

  • Cook pasta according to package directions. Drain and set aside.
  • While pasta is cooking, cook chorizo in a large skillet over medium heat until browned and cooked through, 5 - 7 minutes. Drain excess grease.
  • Return chorizo to the pan. Add cooked pasta and salsa. Cook Until pasta is warmed through. Add cheese and mix well. Cook until cheese is melted.
  • Top with your favorite toppings.

Notes

Be sure to use ground raw chorizo and not the cured chorizo you can find in the deli.
If you cannot find Oaxaca cheese, you can substitute jack or mozzarella cheese.
