  • 1 cup halved cherry tomatoes
  • 5 garlic cloves rough chop
  • 2 tablespoons extra virgin olive oil
  • 4 ounces goat cheese
  • 4 basil leaves chopped
  • 1/2 teaspoon salt
  • 1 baguette

Instructions

  • Preheat oven to 400 degrees.
  • Heat 1 tablespoon olive oil in a small skillet over medium heat. Add tomatoes and garlic. Cook just until the tomatoes start to release their juices and the garlic starts to brown slightly. About 2 minutes.
  • Pour tomatoes and garlic with any juice that have released into a small baking dish. Nestle sliced goat cheese into the tomatoes. Sprinkle with salt and drizzle with remaining olive oil. Cover and bake for 10 minutes.
  • Uncover, turn on broiler and broil 1 - 2 minutes or until cheese browns slightly. Remove from oven and allow to cook several minutes. Sprinkle with basil. Serve with toasted baguette slices.

Notes

This recipe can easily be doubled.
To easily cut goat cheese, use unflavored dental floss.
To get even more garlic flavor, toast the baguette slices for 1 minute under the broiler, rub them with a clove of garlic and broil 1 more minute or until browned.
