Ingredients

Ingredients:

  • 5 mint leaves
  • 3 lime wedges
  • 1/2 ounce simple syrup
  • ice
  • 1 1/2 ounces white rum
  • club soda

Instructions

  • Place mint leaves and 2 lime wedges in the bottom of a glass. Gently muddle with a muddler or the back of a spoon.
  • Add in another lime wedge and simple syrup. Gently muddle again to release the lime juice.
  • Add in ice cubes to almost fill up the glass. Pour rum over the ice.
  • Top with a splash of club soda and stir. Serve with lime wedge and mint leaf as a garnish.

Notes

You don't want to pulverize the mint or it will start to take on a bitter taste. Gently muddling it is perfect.
You can make your own simple syrup by combining 1 cup water with 1 cup sugar. Bring to a boil, reduce heat and simmer until sugar dissolves and then cool. It will keep for a few weeks in the refrigerator.
You may need to adjust the amount of sugar or rum to suit your personal tastes.
