Easy Cheesy Hashbrown Casserole

A classic, easy cheesy hashbrown casserole made with hashbrowns, cream of chicken soup, two kinds of cheddar, thyme and shallots. Cheesy comfort food!

Ingredients

Ingredients:

  • 32 ounces shredded frozen hash browns thawed
  • 1/4 cup minced shallots
  • 1 cup extra sharp cheddar cheese
  • 1 cup sharp white cheddar cheese
  • 1 teaspoon fresh thyme
  • 10.5 ounces condensed cream of chicken soup with herbs
  • 16 ounces sour cream
  • 1 egg
  • 1 sleve Rtiz crackers

Instructions

  • Preheat oven to 350 degrees.
  • Combine thawed hashbrowns, shallots, extra sharp cheddar, sharp white cheddar and thyme. Mix well. 
  • Combine cream of chicken soup, sour cream and egg together in a bowl. Pour the mixture over the hashbrown mixture. Mix well to combine.
  • Place the casserole into a 9x13. Spread evenly. Sprinkle crumbled Ritz crackers on top. 
  • Bake at 350 for 45 - 50 minutes or until golden brown and bubbly. Sprinkle with  more fresh thyme on top. Serve hot.
