1pounddried pasta such as linguine or fettuccine
1tablespoonbutter
1tablespoonolive oil
2clovesgarlicminced
1/4cupminced shallots
1green bell pepperchopped small
1cupheavy cream
1/2cupsour cream
1tablespoonCajun seasoning
1pound51-60 count prawns, peeled and deveined
kosher salt and pepper to taste
Instructions
Start the water for your pasta and cook according to package directions.
Meanwhile, heat olive oil and butter in a large pan over medium heat. Once butter has melted add garlic, shallots and bell pepper. Cook until slightly softened, the bell peppers will still be a bit crunchy, about 3 minutes.
Reduce heat to medium-low. Add heavy cream, sour cream and Cajun seasoning to pan. Stir to combine and cook until warmed through about 3 minutes. Add shrimp and cook for 5-6 minutes or until the shrimp are pink.
Once your pasta is finished cooking, strain and add to sauce, toss to combine. Let stand 5 minutes, toss once more. Serve.
