Homemade Tater Tots

  • 2 pounds russet potatoes peeled
  • 1 tablespoon cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • oil for frying

Instructions
 

  • Peel the potatoes and place them in a large pot of water. Bring to a boil and boil just until par-boiled. 6.- 7 minutes.
  • Remove potatoes and place on a paper-towel lined surface. Pat them dry and allow them to cool to the touch. 
  • Once potatoes are cool, grate the potatoes. Use the larger side of the grater. 
  • Combine the potatoes with cornstarch, paprika, granulated garlic, salt and pepper. Mix well until combined. 
  • Using about 1 tablespoon of the mixture, form into "tot" shape. 
  • Heat about 1 inch of oil in a large heavy bottomed pot to 400 degrees. Fry the tater tots in batches, if needed, until golden brown, 2 - 3 minutes. If cooking in batches, set your oven to warm (or it's lowest setting) place tater tots on a baking sheet lined with a cooling rack on top to keep warm.
