Ingredients
  

Salad Ingredients:

  • 5 cups spring salad mix
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped salami
  • 1/2 cup chopped fresh mozzarella
  • 1/2 cup chickpeas Garbanzo beans, drained and rinsed

Dressing Ingredients:

  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons country style dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh cracked black pepper

Instructions
 

  • Prep the salad dressing 30 minutes ahead by simply whisking all ingredients together and allowing to set at room temperature.
  • Combine all salad ingredients together in a bowl. Toss with salad dressing and serve.
