Place the steak and garlic in a 1 gallon resealable plastic bag.
Slowly lower the steak into the water, allowing the water to push the air out. Seal the bag. Ensure that the entire steak is submerged in the water. Use a clip to keep the bag close to the side of the pan. Set timer for 2 hours.
After two hours, remove steak from bag and pat dry.
Heat oil in a skillet over hight heat. Once the oil starts to shimmer cook steak 30 seconds on each side. Transfer to a cutting board and let rest for 10 minutes.
