This Loaded Greek Salad has all kinds of goodies: olives, tomatoes, cucumbers, red onion, capers and feta and is tossed in a tangy Oregano vinaigrette.

Ingredients
  

Loaded Greek Salad Ingredients:

  • 5 ounces baby greens salad mix
  • 2 to matoes seeded and diced
  • 1/2 cup pitted kalamata olives
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup thinly sliced red onions
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon non-pareil capers

Oregano Vinaigrette Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/2 cup cup white wine vinegar
  • 3 teaspoons Gourmet Garden Oregano Stir-in Paste about a tablespoon fresh oregano leaves
  • 1 teaspoon Gourmet Garden chunky garlic paste 1 clove fresh garlic
  • 3/4 teaspoons salt

Instructions
 

  • Whisk together all ingredients for the dressing and let set at room temperature for 30 minutes so the flavors can meld.
  • Combine all of the salad ingredients together in a bowl. Drizzle with dressing and serve.

Notes

Note: You'll likely have some dressing leftover which should be stored in the refrigerator.
