Creamy Kale and Kielbasa Soup

I have tried other Kale and Kielbasa soups but they were not cream based, I think that added element gives a rich flavor. Adding even potatoes makes it heartier.

Ingredients

Ingredients:

  • 1 tablespoon of olive oil
  • 1/2 medium sized onion diced
  • 1 clove garlic minced
  • 1 14 oz Kielbasa or Turkey Kielbasa
  • 3 Yukon gold potatoes scrubbed and diced small
  • 3 cups of chicken broth
  • 1/4 cup dry wine such as Pinot Grigio
  • 4 cups of kale rinsed, trimmed and torn or cut into pieces (think salad size pieces)
  • 1 cup half and half
  • Freshly ground pepper

Instructions

  • In a soup pot over medium heat heat olive oil. Once olive oil is heated add onions and garlic and saute for 1-2 minutes.
  • Next add the kielbasa and saute for 2 minutes and then add potatoes. Cook for 5 minutes
  • Next add the dry white wine, chicken broth and the kale. Cook for 20-25 minutes or until the potatoes are soft with punctured with a fork.
  • Reduce the heat and add the half and half. Simmer for 10 more minutes but do not bring to boil.
  • Ladle soup into bowls and top generously with freshly ground pepper.
