1 1/2poundsboneless skinless chicken breastcut into 1" pieces
1 tablespoon cajun seasoning divided
1whole red bell pepperdiced
1wholegreen bell pepperdiced
1/2wholemedium yellow oniondiced
1cup heavy cream
1/2cup sour cream
1pounddried pastasuch as linguine, spaghetti or fettuccine
Combine chicken breast and two teaspoons of Cajun seasoning. Toss chicken to coat. Allow to marinate while you cook the vegetables. Start cooking the pasta and cook according to package directions. Drain and set aside.
Heat butter and olive oil together in a large pan until butter melts. Add in green and red bell peppers, onion and garlic. Cook just until they start to soften about 3 minutes. Remove and set aside.
To the same pan you cooked the veggies in, add the marinated chicken. Cook until browned and cooked through, 5 - 7 minutes. Return veggies to the pan.
Add cream and sour cream to the pan. Cook until the sour cream has dissolved into sauce and sauce is smooth. Add in noodles and toss to coat. Turn off heat. Allow to set 5 minutes. Stir once more, season to taste with salt and serve.
