Homemade Blueberry Pie

Blueberry Pie is bursting with sweet summer blueberries. Serve warm with vanilla ice cream for the perfect summer dessert!

Ingredients

  • 2 pie crusts
  • 5 cups fresh blueberries rinsed and dried
  • 3/4 cup granulated sugar
  • 1/2 cup cornstarch
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 egg
  • 1 teaspoon water
  • 1 teaspoon coarse sugar

Instructions

  • Preheat oven to 400 degrees.
  • Combine blueberries, sugar, corn starch, lemon juice and lemon zest together in a bowl. Mix well to completely coat the blueberries.
  • Press one pie crust into the bottom of a 9 inch pie pan. Flute edges if desired. Pour berry filling into crust.
  • Cut the other pie crust into 10 strips. Lay 5 strips across the pie. Fold back every other strip. Lay one of the five remaining strips across the opposite way and fold back the strips to their original position. Repeat with the remaining strips.
  • Whisk together egg and water. Brush on top of pie crust. Sprinkle with coarse sugar if using. Bake at 400 degrees for 30 minutes. Reduce heat to 375 continue baking until crust is browned and filling is bubbly. Cool completely before slicing.

Notes

If the crust starts to get too brown, cover the edges with aluminum foil.
