Egg Bites with Bacon and Chives
This Easy Egg Bites Recipe is perfect for breakfasts on the go! Eggs mixed with smoky bacon and chives is a great way to start your day.
- 8 eggs
- 1 tablespoon heavy cream
- 4 slices thick cut bacon cooked and crumbled
- 1 tablespoon chives chopped
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Whisk together eggs and heavy cream. Add in bacon, chives, salt and pepper.
Spray muffin tin with non-stick spray (or grease with butter). Fill 12 muffin tin cups with 1/4 cup of the mixture.
Bake at 350 for 12 - 15 minutes or until eggs are puffed and browned on the edges.
Egg bites will puff up when cooked but deflate once they cool.
Reheat in the microwave for 30 seconds - 1 minute.
