Egg Bites with Bacon and Chives

This Easy Egg Bites Recipe is perfect for breakfasts on the go! Eggs mixed with smoky bacon and chives is a great way to start your day.

Ingredients
  

  • 8 eggs
  • 1 tablespoon heavy cream
  • 4 slices thick cut bacon cooked and crumbled
  • 1 tablespoon chives chopped
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt

Instructions
 

  • Whisk together eggs and heavy cream. Add in bacon, chives, salt and pepper.
  • Spray muffin tin with non-stick spray (or grease with butter). Fill 12 muffin tin cups with 1/4 cup of the mixture.
  • Bake at 350 for 12 - 15 minutes or until eggs are puffed and browned on the edges.

Notes

Egg bites will puff up when cooked but deflate once they cool. 
Reheat in the microwave for 30 seconds - 1 minute.
