Green Bean Bundles

Turn green beans into a showstopper by making these Green Bean Bundles. Tossed in garlic and herbs then wrapped in bacon, these are side dish perfection.

Ingredients

  • 1 1/2 pounds green beans trimmed
  • 1 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 slices bacon cut in half

Instructions

  • Preheat oven to 375 degrees. Line baking sheet with aluminum foil.
  • Bring a large pot of water to boil. Add beans and cook for 3 - 4 minutes or until bright green. Use a strainer to transfer to a bowl of ice water. Allow to cool.
  • Once beans have cooled, pat dry. Place in bowl and add olive oil, garlic, salt, pepper and thyme. Toss to coat.
  • Divide green beans into 8 bundles (6 - 8 beans per bundle). Wrap with bacon. Place bundles on prepared baking sheet. Bake for 20 - 25 minutes or until beans are tender and bacon is crisp. Sprinkle with more black pepper and serve.

Notes

Recipe can easily be doubled. 
I didn't need to use toothpicks to secure the bacon but you can if you like. I simply made sure the open ends of the bacon were on the bottom of the bundles when I put them on the baking sheet.
