Chicken Chow Mein

Everyone's favorite takeout entree is easy to make at home! This Chicken Chow Mein recipe is loaded with veggies and quick enough for a weeknight dinner.

Ingredients

  • 12 ounces chow mein noodles
  • 3 tablespoons canola oil
  • 1 pound boneless skinless chicken breasts
  • 4 cups shredded cabbage
  • 1/2 yellow onion sliced
  • 1 carrot cut into matchsticks
  • 3 celery diced
  • 6 cloves garlic
  • 2 green onions

Chow Mein Sauce Ingredients

  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin

Instructions

  • Whisk together ingredients for sauce. Cook noodles according to package directions.
  • Toss chicken with 1 tablespoon sauce.
  • Heat 1 tablespoon oil in a large skillet or wok over medium high heat. Cook chicken until browned and cooked through. Transfer to another plate and set aside.
  • Heat remaining 2 tablespoons oil in the same skillet. Add cabbage, yellow onion, carrot, cerely and garlic. Cook just until softened, about 3 - 5 minutes.
  • Return chicken to the pan and add noodles. Pour remaining sauce over the top and toss to coat. Continue to cook until warmed through. Sprinkle with green onions. Serve.
