Ham and Cheese Quiche

Ham and Cheese Quiche is a great way to use up leftover ham. This decadent quiche is made with diced ham and shredded gruyere cheese.

Ingredients

  • 1 pie crust
  • 1 tablespoon extra virgin olive oil
  • 1/2 yellow onion sliced
  • 3 eggs
  • 8 ounces heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 ounces gryuere cheese shredded
  • 1 cup diced ham
  • 2 tablespoons parsley chopped

Instructions

  • Place pie crust in a 9" pie plate (or tart dish) and flute the edges if desired. Blind bake at 450 for 10 - 12 minutes. Or according to package directions if using a storebought crust. Reduce heat to 350 degrees.
  • Heat olive oil in a skillet over low heat. Add onions and cook until browned, about 10 - 15 minutes.
  • Whisk together eggs, cream, salt and pepper.
  • Build the quiche by layering the cheese, then onions then ham and finally pour the egg/cream mixture over the top. Bake at 350 45 - 50 minutes. Remove from oven. Allow to cool several minutes, sprinkle with parsley if desired, slice and serve.

Notes

Blind baking the pie crust is important so don't skip this step! It'll result in a gummy quiche. 
If the crust begins to brown too much, loosely cover the quiche with aluminum foil.
