Mushroom Bacon Skewers

Mushroom Bacon Skewers are an easy, yet beautiful appetizer! If you need a finger food for your next party these are a must!

Equipment

  • 6 inch skewers

Ingredients

  • 9 crimini mushrooms cleaned and halved
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon black pepper
  • 6 slices bacon

Instructions

  • Toss the mushrooms with olive oil, thyme leaves and black pepper.
  • You're going to alternate bacon and mushrooms on the skewer. Grab one slice of bacon and thread it onto the skewer. Thread a mushroom half then bring the bacon up and thread again. Repeat until you have 3 mushrooms on the skewer. You'll end with the bacon. At this point you can refrigerate until ready to cook.
  • Place skewers in a single layer with the mushroom cut side down in a cast iron skillet. Cook over medium-low heat and cook for 3 - 5 minutes or until mushrooms have browned. Turn and continue to cook until bacon is cooked through.
  • Sprinkle with salt and more pepper. Serve immediately.

Notes

This recipe should yield approximately 6 skewers depending on the size of the mushrooms. But you can really make as many or as few as you like!
