Ingredients
1cupcherry tomatoeshalved
2tablespoonsextra virgin olive oil
2clovesgarlicdivided: 1 minced, 1 whole
6ouncesburrata cheese
5 ouncesbaby arugula
salt and pepper
8baguette slices
Instructions
Combine tomatoes, olive oil and minced garlic together in a bowl. Set aside for at least 20 minutes to allow the flavors to mingle.
Make the garlic toasts by placing the crostini slices on a baking sheet and broil for 1 minute. Rub with whole garlic clove and put back under the broiler just until golden brown. About another minute.
Assemble the salad. Place arugula in a shallow bowl, or on another serving platter. Place one burrata cheese ball in center on arugula and drizzle tomatoes over the top. Tear another ball of burrata and lay it around the salad. Serve with the toasts on the side or scattered around the salad.
