Ingredients
1 1/4poundflat iron steak thinly sliced into 1/4 inch thick slices
2tablespoonscornstarch
1tablespoonsoy sauce
1tablespoonShaoxing Wine
6cupsfresh broccoli florets about 1 pound
Beef and Broccoli Sauce Ingredients:
1/4 cuplow sodium chicken broth
3tablespoon ssoy sauce
1tablespoonShaoxing wine
1 tablespoonOyster sauce
1tablespooncornstarch
1teaspoonbrown sugar
1teaspoonsesame oil
Instructions
Slice steak into 1/4 inch thick slices. Place in a bowl and add cornstarch, soy sauce and Shaoxing wine. Use clean hands to completely coat the meat in the cornstarch/soy sauce/wine. Set aside.
Bring a large pot of water to a boil and add broccoli. Cook just until it turns bright green, 2 - 3 minutes. Use a slotted spoon to transfer to a bowl of ice water. This will stop the cooking. Drain and pat the broccoli dry.
Whisk together all of the ingredients for the sauce.
Heat a large wok over medium-high heat. Cook the steak, in batches if necessary, until browned and cooked through.
Reduce heat to medium-low. If you've cooked the meat in batches, return all of the beef to the pan and add in broccoli and sauce. Cook several minutes until the sauce starts to thicken. Season to taste with salt and pepper and serve over rice.
