Fried Enoki Mushrooms

Ingredients

  • 7 ounces enoki mushroom
  • 1 cup all purpose flour
  • 1 tablespoon cornstarch
  • 3/4 teaspoon salt
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon black pepper
  • 8 ounces ice water
  • oil for frying

Instructions

  • Trim the brownish ends of the enoki mushroom and then slice lengthwise through the base. You should have 4 - 6 mushrooms. Gently rinse to remove any remaining dirt.
  • Combine flour, cornstarch, salt, granulated garlic and pepper together in a large bowl. Mix well.
  • Heat 2 inches of oil in a large pot over medium heat to 375 degrees.
  • While the oil is heating finish making the batter by dipping the mushrooms in the batter and let the excess drip off.
  • Once the batter is hot, fry the mushrooms, in batches if necessary until golden brown and crispy. Transfer to a paper towel line plate. Sprinkle with salt and serve immediately.
