Kielbasa Fried Rice

Kielbasa Fried Rice is a delicious twist on the classic! Made with smoky kielbasa, brussels sprouts, carrots and of course, a fried egg.

Ingredients

  • 2 tablespoons olive oil
  • 3 cups shredded Brussels sprouts
  • 1/2 cup diced yellow onion
  • 1/2 cup diced carrots
  • 4 cloves garlic minced
  • 14 ounces kielbasa sausage diced
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 6 eggs
  • 3 green onions diced

Instructions

  • Saute the onions, shredded Brussels sprouts, onion, carrots and garlic together in a large pan (or Wok) just until they are softened. Add in the kielbasa and cook until browned and warmed throughout.
  • Add in rice, soy sauce and sesame sauce. Stir to mix well and continue cooking until the rice is warmed through. Add in green onions.
  • To another skillet, add some oil just to coat the bottom of the pan and cook eggs to desired doneness.
  • Serve rice with an egg over the top. Garnish with more green onions if desired.

Notes

If you are unsure about using day-old rice, you can also cook rice in the morning, spread an even layer on a baking sheet and refrigerate for several hours before using. 
You'll notice there is no added salt in this recipe and that is because the soy sauce and sausage are salty. If you want to add salt, be sure to taste the rice first before adding.
