  • 3 - 4 roma tomatoes seeded and diced
  • 1/4 cup minced white or yellow onion
  • 2 cloves garlic minced
  • 1 jalapeno or serrano chili pepper seeds removed if desired
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon kosher salt plus more as desired
  • 1/4 cup chopped fresh cilantro
