Ingredients

Lemon Poppy Seed Bread Ingredients:

  • 1/2 cup butter softened
  • 1 cup granulated sugar
  • 2 eggs
  • 3/4 teaspoon lemon extract
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup milk
  • 1 teaspoon lemon zest
  • 1 tablespoon poppy seeds

Glaze Ingredients

  • 1/2 cup powdered sugar
  • 1 - 2 tablespoons milk

Instructions

  • Preheat oven to 350 degrees. Butter an 8x4 inch loaf pan.
  • Beat together butter and granulated sugar until light and fluffy.
  • Beat in eggs one at a time. Beat in lemon extract.
  • Combine flour, baking powder and salt together in a bowl. Slowly add to butter mixture. Slowly add milk.
  • Fold in lemon zest and poppy seeds.
  • Pour batter into prepared pan. Bake in preheated oven for 50 - 60 minutes or until a toothpick inserted comes out clean.
  • Remove from oven and cool completely.
  • To make the glaze whisk together powdered sugar and 1 tablespoon milk. Add remaining tablespoon if you'd like the glaze a bit thinner. Drizzle over the bread. Slice and serve.
