Slow Cooker Sweet Chili Meatballs

Sweet Chili Meatballs are a great weeknight dinner! Flavor packed pork meatballs with sesame, garlic and soy sauce are slow cooked in a sweet chili sauce.

Ingredients

Ingredients:

  • 1 1/2 pound ground pork
  • 3 cloves garlic minced
  • 1/2 cup panko bread crumbs
  • 2 teaspoons soy sauce
  • 2 teaspoons sesame oil
  • 1/2 teaspoon salt
  • 1 tablespoon sesame seeds plus more for garnish
  • 1 egg beaten
  • 1/2 cup beef broth
  • 1 1/2 cups sweet chili sauce

Instructions

  • Combine pork, garlic, panko, soy sauce, sesame oil, salt, 1 tablespoon of sesame seeds and egg together in a bowl. Work with your hands to mix well. Roll into approximetly 20 meatballs.
  • Place the meatballs in your slow cooker. Pour in beef broth. Cover and cook on low for 4 hours.
  • After 4 hours, stir the meatballs and pour in sweet chili sauce. Cover and cook on low for two more hours.
  • Transfer to a serving platter sprinkle with sesame seeds and serve with rice, if desired.

Notes

Try not to over work the meatball mixture. Overworking can result in dryer meatballs. 
If you want the sauce to be a bit thicker, uncover for the last 30 minutes of cooking.
