24ouncescherry tomatoes or a mixture of small tomatoes, halved
1teaspoonkosher salt
1/2fresh cracked pepper
1-3garlic clovesrough chopped (optional)
2tablespoonsolive oildivided
Instructions
Preheat oven to 250 degrees.
Line a baking sheet with parchment paper and place halved tomatoes on sheet. Sprinkle with salt, pepper and minced garlic cloves, if using. Drizzle lightly with 1 tablespoon olive oil.
Bake for 70 - 90 minutes. Tomatoes are done when they have collapsed and are done to your liking.
Loosely covere with aluminum foil and allow to cool slightly. Drizzle with remaining olive oil, serve.
