Ground Chicken Teriyaki with Zucchini and Onions

Ground chicken, zucchini, onions and a few staple spices make this quick and easy delicious stir fry.

Ingredients

Ingredients:

  • 2 cups uncooked jasmine rice
  • 1/4 cup teriyaki
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1 tablespoon rice vinegar
  • 1 tablespoon roasted sesame seeds
  • 1 pound ground chicken
  • 2 teaspoons sesame oil
  • 1 zucchini sliced into 1/4 inch circles
  • 1/2 onion sliced
  • 2 cloves garlic minced
  • chopped green onion for garnish

Instructions

  • Start rice, cook according to package directions.
  • In a bowl mix together teriyaki, soy sauce, sriracha, rice vinegar and sesame seeds.
  • In a large skillet or wok brown ground chicken over medium heat. Transfer to a strainer or colander, drain pan juices. Transfer to plate. Set aside.
  • In the same skillet add the sesame oil. Once hot add zucchini, sliced onion and garlic. Cook for 3-5 minutes or until slightly softened.
  • Return chicken to pan. Pour teriyaki mixture over the top. Reduce heat and simmer for 10 minutes. Stirring occasionally.
  • Spoon chicken mixture over rice. Sprinkle with chopped green onions. Serve.
