Reuben Sandwich

A deli classic! This Reuben Sandwich is loaded with corned beef, tangy sauerkraut, creamy Russian dressing and melty Swiss cheese.

Ingredients

  • 3/4 pound corned beef sliced thin
  • 4 slices Swiss cheese
  • 3/4 cup sauerkraut drained
  • 8 slices marbled rye

Russian Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup chili sauce such as heinz
  • 1 tablespoon minced yellow onion
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon prepared horseradish

Instructions

  • Make the Russian dressing by whisking all ingredients together.
  • To assemble one sandwich, butter one side of each slice of bread. On other side, spread Russian dressing. Place several slices of corned beef on the dressed side, top with sauerkraut and Swiss cheese. Place other slice on top with buttered side out. Repeat with remaining ingredients.
  • Place sandwiches on griddle or in a skillet. Toast bread on each side until bread is golden brown and cheese has melted.

Notes

You can use pastrami if that is what your deli has. 
Russian Dressing has a bit of a kick. To tone it down, you can use thousand island dressing instead.
