Creamed Spinach

Creamed spinach is a steakhouse favorite that's easy to make at home! This spinach simmered in a decadent creamy sauce is side dish heaven.

Ingredients

  • 2 tablespoons butter
  • 1/2 cup shallots thinly sliced
  • 4 cloves garlic minced
  • 1 1/2 cups heavy cream
  • 1/8 teaspoon nutmeg
  • 1/2 cup parmesan cheese
  • salt and pepper
  • 20 ounces frozen spinach thawed and excess water removed

Instructions

  • Melt butter in a large skillet over medium heat. Once melted add in shallot. Cook 1 - 2 minutes. Add in garlic and cook 1 more minute or until shallots start fo soften and garlic is fragrant.
  • Slowly whisk in the heavy cream. Add in nutmeg. Bring to a simmer, but not a boil. Once cream is warmed and steaming add in the Parmesan one handful at a time whisking continously until smooth.
  • Add spinach to cream sauce and mix well so that the spinach is completely coated in the sauce. Season to taste with salt and pepper. Serve immediately.

Notes

It is very important to make sure that the excess moisture has been removed from the spinach. It's easiest to do this by squeezing it in paper towels.
