Ingredients

  • 8.5 ounces unsalted whole cashews about 1 1/2 cups
  • 2 tablespoons honey
  • 1 1/2 teaspoons chopped fresh rosemary
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne

Instructions

  • Place unsalted cashews in a large skillet or pot. Cover and toast over low heat for 5 - 10 minutes, just until warmed through. Shake the pan every once in a while to prevent burning.
  • Add in honey. Stir to ensure that all cashews are coated. Remove from heat and stir in rosemary, salt and cayenne.
  • Spread cashews on a parchment lined baking sheet in a single layer. Wait until they are cool enough to touch, but they can be served warm or at room temperature.

Notes

Be sure to keep an eye on the nuts when you are toasting them. They can burn easily!
Start with 1/8 teaspoon of cayenne pepper to make sure they aren't too spicy but add more as desired.
