This Simple Arugula Salad can be made in minutes! Tender baby arugula, parmesan and red onion lightly dressed with olive oil and lemon.

Ingredients
4cupsbaby arugula
1tablespoonlemon juice
1tablespoonextra virgin olive oil
1/4teaspoonkosher salt
1/4teaspoon black pepper
1/4cup red onion sliced thin
1/4cupgrated Parmesan cheese
Instructions
Place arugula in a bowl. Add lemon juice, olive oil, salt and pepper. Use clean hands to gently massage the arugula. This will only take a minute or two. You'll start to feel the leaves soften.
Add the red onion and Parmesan then toss with utensils. Season once more with salt and fresh pepper and serve immediately.
Notes
It is best to make this immediately before serving. Once you massage the greens they will get tender and begin to wilt. This serves 4 as a side salad but as a main course will serve 1 - 2. Nutrition information for estimation purposes only.
