Thai Basil Pork

Ingredients

  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon oyster sauce
  • 1 teaspoon dark soy sauce
  • 3/4 teaspoon sugar
  • 2 tablespoons oil
  • 1 shallot thinly sliced
  • 6 cloves garlic thinly sliced
  • 1 red jalapeno seeded and thinly sliced
  • 1 1/4 pound ground pork
  • 1 cup Thai basil packed

Instructions

  • Whisk together all ingredients for the sauce.
  • Heat oil in a wok or other large skillet. Add in shallots, sliced peppers and garlic. Cook just until the garlic becomes fragrant.
  • Add ground pork and cook until browned.
  • Pour sauce over the top and continue cooking until the sauce cooks down and is absorbed by the pork.
  • Add in the basil an continue cooking until the basil wilts, about 2 minutes. Garnish with more fresh basil and green onions.
  • Fry eggs if desired. Serve on a bed of rice with the egg over the top.
