Ingredients

  • 8 tablespoons butter
  • 1 yellow onion diced
  • 1/4 cup all purpose flour
  • 3 cups whole milk
  • 2 cups low-sodium chicken broth
  • 5 cups broccoli florets
  • 1/2 teaspoon paprika
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon granulated garlic
  • 12 ounces sharp cheddar cheese shredded

Instructions

  • Melt butter in a large pot over medium heat. Add onion and sauté just until softened, about 5 minutes. Whisk in flour and allow to cook 1 minute.
  • Slowly whisk in milk and chicken broth. Add broccoli, paprika, nutmeg and granulated garlic. Reduce heat to low and cover. Cook 20 - 25 minutes or until the broccoli is tender.
  • Uncover and whisk in cheese 1 handful at a time until it melts. Season to taste with salt and pepper. Serve hot with crusty bread.

Notes

It is important to let the flour cook for at least 1 minute. This will help avoid any raw flour taste.
Try to avoid allowing the soup to boil. If it gets too hot it can become grainy.
