Heat olive oil in a large pot over medium heat. Once warm add onions. Cook just until they start to soften, 2 - 3 minutes. Add in garlic, curry powder and rice. Cook 1 - 3 minutes or until the rice is translucent.
Pour in the chicken broth and stir. Bring to a boil. Reduce heat and cook for 20 minutes. Allow to set for 5 minutes then fluff with a fork. Serve.
Notes
You can use any long grain white rice for this recipe. Don't use brown rice as it requires different cooking times. Nutrition information for estimation purposes only.
