Melt butter in a large pot over medium heat. Add onion and sauté just until softened, about 5 minutes. Whisk in flour and allow to cook 1 minute.
Slowly whisk in milk and chicken broth. Add broccoli, paprika, nutmeg and granulated garlic. Reduce heat to low and cover. Cook 20 - 25 minutes or until the broccoli is tender.
Uncover and whisk in cheese 1 handful at a time until it melts. Season to taste with salt and pepper. Serve hot with crusty bread.
Notes
