Blackened Fish

Blackened Fish is a simple, flavorful way to prepare just about any variety of fish. It works great for rockfish, salmon, shrimp and cod.

Ingredients

  • 4 fillets rockfish or other firm white fish
  • 4 tablespoons butter
  • 1 - 2 tablespoons blackening seasoning homemade or store bought

Instructions

  • Rub blackening seasoning on both sides of the fish fillets.
  • Heat cast iron skillet over high heat. Add butter. After butter melts add the fish fillets.
  • Allow the fish to cook 1 - 3 minutes per side (depending on the size of the fish). Transfer to a serving platter, serve with lemon wedges on the side.
