Ingredients

  • 1/4 cup kalamata olives pitted and sliced
  • 1/4 cup green olives pitted and diced
  • 1 tablespoon non-pareil capers
  • 1/2 teaspoon dried oregano
  • 1 clove garlic minced
  • 1 1/2 pounds salmon pin bones removed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 lemon sliced

Instructions

  • Preheat oven to 375 degrees. Line a rimmed backing sheet with aluminum foil. Combine olives, capers, dried oregano and garlic together in a bowl. Mix well.
  • Place salmon, skin side down, onto a baking sheet. Drizzle with olive oil, sprinkle with salt, pepper and Italian seasoning. Top with lemon slices and olive mixture. Bake in preheated oven for 15 - 20 minutes or until salmon reaches and internal temperature of 135. Salmon will continue cooking when removed from the oven. Serve.

Notes

According to the USDA salmon is fully cooked when it reaches 145 degrees. However , some people prefer to eat salmon medium-rare (temperature of 125 - 130). Note that eating raw or undercooked seafood does increase your risk of food-borne illness.
