Oven Roasted Salmon with Olives is a simple, easy to follow recipe that is packed with flavor! Perfect for weeknights.

When I am looking for something quick, easy and light to make for a weeknight dinner, seafood is my go-to. Why? Because seafood cooks quickly! Most seafood dinners you can have on the table in under 30 minutes. This means that it is perfect when you’re busy but still want to get a delicious, healthy dinner on the table.

And when it comes to seafood, being Pacific Northwest natives, Salmon is often at the top of our list. And this version with olives is our latest family fave.

Let’s talk about what you need to make it.

Oven Roasted Salmon ingredients:

  • SALMON: Here in the Pacific Northwest I have access to some pretty fresh and delicious salmon. I prefer fresh, wild salmon but if that is not available to you use the highest quality salmon that you can find in your area. If it is frozen simply thaw it before cooking.
  • OLIVES: You an use a blend of your favorite olives. I used pitted Kalamata and green olives. You could use black olives or Castelvetrano olives. For ease, it is important to make sure that the olives are pitted.
  • CAPERS: I adore capers, especially with seafood. They add a briny, salty flavor to any dish. You should be able to find them in the condiments section of your grocery store, near the jarred pickles and olives.
  • OREGANO: I used dried because it is what I had on hand. If you have fresh you can use that as well.
  • GARLIC
  • SALT/PEPPER
  • ITALIAN SEASONING: To season the salmon.
  • OLIVE OIL
  • LEMON SLICES: Adds a touch of lemon flavor and acidity to the dish.

Step by Step Photos and Instructions:

Making Oven Roasted Salmon is really easy! For this recipe, you’ll make the olive mixture first then put it on top of the salmon before baking. And that’s it! Told you it was easy.

  • STEP #1: Preheat oven to 375 degrees and line a rimmed baking sheet with aluminum foil. While oven is preheating, combine the olives, capers, dried oregano, and garlic together in a bowl. Mix well.
  • STEP #2: Place salmon filets on prepared pan. Drizzle with olive oil, sprinkle with salt, pepper and Italian seasoning. Top with lemon slices and olive mixture. Bake in preheated oven for 20 minutes or until salmon reaches 135 degrees. It will continue cooking when you remove it from the oven.
  • STEP #3: Allow salmon to rest 5 minutes and serve.

Storage and Leftovers:

I highly recommend eating this salmon immediately after preparing it, reheating it runs the risk of overcooking it. The olive mixture however, can be made in advance.

Recipe FAQ:

Do you have to remove pin bones from salmon?

The pin bones in salmon are edible. However, I prefer to remove them if they are present. Many times they will be removed at the grocery store before you buy it. If you run your finger along the filet you should be able to feel, and remove, any pin bones.

At what temperature is salmon cooked?

According to the USDA salmon is fully cooked at 145 degrees F. That being said, some prefer to eat salmon at medium rare (125 – 130 degrees F) and find it dry when to cooked to 145. Keep in mind salmon will continue to cook once removed from the oven.

Ingredients
  

  • 1/4 cup kalamata olives pitted and sliced
  • 1/4 cup green olives pitted and diced
  • 1 tablespoon non-pareil capers
  • 1/2 teaspoon dried oregano
  • 1 clove garlic minced
  • 1 1/2 pounds salmon pin bones removed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 lemon sliced

Instructions
 

  • Preheat oven to 375 degrees. Line a rimmed backing sheet with aluminum foil. Combine olives, capers, dried oregano and garlic together in a bowl. Mix well.
  • Place salmon, skin side down, onto a baking sheet. Drizzle with olive oil, sprinkle with salt, pepper and Italian seasoning. Top with lemon slices and olive mixture. Bake in preheated oven for 15 – 20 minutes or until salmon reaches and internal temperature of 135. Salmon will continue cooking when removed from the oven. Serve.

Notes

According to the USDA salmon is fully cooked when it reaches 145 degrees. However , some people prefer to eat salmon medium-rare (temperature of 125 – 130). Note that eating raw or undercooked seafood does increase your risk of food-borne illness.
